  • 260g water
  • 10g salt

  • Combine bread flour and water in a bowl, mix until just combined.
  • Autolyse for 30 minutes.
  • Add sourdough starter and salt, mix well until incorporated.
  • Perform stretch and folds every 30 minutes for 2 hours.
  • Shape the dough into a round, place it in a lightly floured proofing basket.
  • Cover and let it proof at room temperature for 3-4 hours, or until doubled in size.
  • Preheat oven to 230°C (450°F) with a Dutch oven inside.
  • Carefully transfer the dough into the hot Dutch oven, score the bread.
  • Cover and bake for 20 minutes, then uncover and bake for another 20 minutes or until golden brown.
  • Cool on a wire rack before slicing.
