Red Velvet Cream Tart with Strawberry

Pastry Dough

  • 340gms All purpose flour
  • 20gms Dutch processed cocoa powder
  • 200gms Cold unsalted butter (cut into cubes)
  • 50gms Caster sugar
  • 75gms Icing sugar
  • 2 egg yolks
  • 1 – 4 tbsp cold water
  • 1 tsp salt
  • 4-5 drops red gel colour

Cream Cheese Strawberry Swirl Frosting

  • 1 cup (150gms) fresh strawberries
  • 1/3 cup (70gms) granulated sugar
  • 200gms cream cheese softened
  • 175gms white chocolate melted and cooled
  • 1tsp vanilla extract
  • 1 pinch salt
  • 2 cups whipping cream

Cream tarts are all the latest sensation in the baking circles. And what better way to celebrate Valentine's day than to recreate it with a rich decadent Red velvet version of it, with a hint of chocolate and the creamy tartness of creamcheese with a strawberry twist.

Recipe Detail

 Pastry Dough - Prepration

  1. Preheat the oven to 170⁰C.
  2. Stir together all-purpose flour, cocoa powder, caster sugar, icing sugar and salt.
  3. Pulse together flour mixture along with butter cubes in a food processor till it resembles coarse sand texture.
  4. Mix egg yolks and gel colour together and blend it into the dough briefly till it is evenly incorporated.
  5. Add in cold water one tbsp at a time till the mixture is just moist.
  6. Without kneading too much, bring the mixture together into a smooth ball.
  7. Flatten the ball into a disk, wrap in cling film and refrigerate for an hour.
  8. Take out the dough and leave at room temperature for 15mts.
  9. Roll the dough evenly between 2 parchment papers to 1/4th inch thickness.
  10. Use a paper template and cut out the dough to the shape desired.
  11. Transfer to a baking tray along with the parchment paper and freeze for 10 mts.
  12. Repeat to cut out one more of the same shape, transfer to tray and freeze.
  13. Remove and bake immediately for 15 - 18 mts.
  14. Allow to cool slightly before transfering to a cooling rack and let it cool completely.

Cream Cheese Strawberry Swirl Frosting - Prepration

  1. Make a puree of the strawberries and strain them.
  2. In a pan cook the puree along with the sugar till it reaches a thick consistency.
  3. Keep aside till it cools down completely.
  4. Lightly beat the cream cheese, add the melted and cooled white chocolate, vanilla extract and salt till well incorporated.
  5. In another bowl whip the chilled cream till soft peaks form.
  6. Add the cream cheese mixture and whip till everything is well incorporated and stiff peaks form.
  7. Now add the cooled strawberry compote to the cream mixture with a spatula and mix very gently to create a ripple effect.
  8. Put the frosting in a piping bag with a big round nozzle.


  1. Put one of the shaped tart shells on a prepared board and secure the bottom with a couple of small dollops of the frosting.
  2. Pipe the frosting in round dollops in neat rows to cover the entire surface of the tart.
  3. Gently place the second tart shell on top of the first one aligning the shape.
  4. Repeat with the frosting.
  5. Garnish the tart with fresh strawberries, fresh flowers, macarons, meringue kisses or any other garnishing of choice
