Ingredients

Ganache

10g Green Chilies chopped
100g Cream
30g Glucose syrup
5g Butter
15 g Invert Sugar
200g Dark Chocolate melted

A yummy Chilli Spiced Rolled Truffles for some spicy sweet treat.

Recipe Detail

Combine cream, glucose syrup, Invert sugar, chopped chilies in a saucepan bring to boil & let it sit for 5 minutes
Sieve & Cool cream at 40°C
Pour the cream mixture over the tempered chocolate & agitate to make ganache
Pour the ganache in a cooling tray or hotelpan & allow to cool at room temperature, until firm this may take 1 hour or so..
Agitate the ganache lightly placing it on a marble slab to induce crystallization.
Roll the ganache into small balls & precoat in tempered chocolate using dipping method or dust in cocoa powder
Let it cool & crystallize before serving
