Ingredients

Ganache

  • 10g Green Chilies chopped
  • 100g Cream
  • 30g Glucose syrup
  • 5g Butter
  • 15 g Invert Sugar
  • 200g Dark Chocolate melted

Recipe Detail


  1.  Combine cream, glucose syrup, Invert sugar, chopped chilies in a saucepan bring to boil & let it sit for 5 minutes
  2. Sieve & Cool cream at 40°C
  3. Pour the cream mixture over the tempered chocolate & agitate to make ganache
  4. Pour the ganache in a cooling tray or hotelpan & allow to cool at room temperature, until firm this may take 1 hour or so..
  5. Agitate the ganache lightly placing it on a marble slab to induce crystallization.
  6. Roll the ganache into small balls & precoat in tempered chocolate using dipping method or dust in cocoa powder
  7. Let it cool & crystallize before serving
