It is a fusion chocolate bonbon made from chocolate and Indian flavours . As because my mother is so special for me so ,this recipe is dedicated to my mother . I tried to infused all flavours of kulfi in this recipe because she loves kesar pista kulfi . I used white chocolate for outer shell and filled with kesar white chocolate ganache and crunch of salted pistachio.
This recipe is full of Indian flavours and made with lots of love. I really enjoyed during making and my family also loved the chocolate.
Step 1 - Ganache Making
Pour the cream in a pan heat till bubbles arise and pour into the chopped white chocolate . Mix it
properly then add some drops of sugarin yellow colour and few drops of saffron essence and add some
threads of saffron .
Step 2 - Pistachio Crunch
Crush the pistachio , add powdered sugar and melted butter . Mix it well . Pour this mixture in a baking
tray and bake at 180 degree celcius for 5 to 6 mins. This will make pistachio more crunchy .
Step 3 - Chocolate Making
Melt the chocolate in double boiler till 45 degree and then temper the chocolate . Pour tempered
chocolate in mould and make cavity and keep in freeze for some time . Then pipe some saffron ganache and
crunchy pistachio layer by layer and seal with white chocolate .
Freeze it foe some time and demould . Apply some gold dust .
