No Bake Eggless Nougat by Inchara

Ingredients

• 250g Honey
• 35g Aquafaba
• 330g Castor Sugar
• 100g Water
• 50g Liquid Glucose
• 65g Cocoa Butter
• 200g Almonds
• 200g Pistachio

Recipe Detail

1. Boil the honey to 120 degrees.
2. Simultaneously, in the kitchen aid with the balloon whisk attachment, make a meringue with the aquafaba.
3. Pour the honey into the meringue in a string and let it whip.
4. Boil together the water, castor sugar and liquid glucose to 152 degrees.
5. Pour it into the meringue mix in a string.
6. Melt the cocoa butter and add it in bit by bit into the mix, keep some on reserve to coat hands and the tray.
7. Once the meringue comes together, fold in the nuts.
8. Line the mixture onto a tray lined with parchment paper. Keep it air tight.
