  • You can refrigerate fondant: Have you heard of cake artists using humidity controlled refrigerators? If you have not found one for your use, do not worry. What you can do is try to keep your cake refrigerator at the warmest setting so you can minimize the difference between the air temp and the refrigerator temp, limiting the condensation amount that forms when you take your cake out of the fridge.

What you want to do is use the thinnest roll of fondant possible with having to sacrifice its elasticity.   • You can make your fondant strong: Did you know that you can strengthen the fondant you have to work with if you need to? The trick is to add Tylose powder, which is a food-safe hardening agent, to soft and warm fondant. Take a golf ball-sized piece of fondant and knead about 1/2 a teaspoon of the powder and continue working. When you lay the items to dry, they will begin to harden within several hours and in a few days, they will completely harden. Just remember not to add the Tylose too soon or your fondant will harden and dry out, making it difficult to work with.
